Bake lighter cupcakes

A calorie-counting buddy of mine shared a trick she uses to make low-fat cupcakes from a mix: skip the eggs and oil and use diet soda instead.

Sounds wacky, but I tried it last night with Betty Crocker vanilla cake mix and a can of diet 7-Up. The result was really good! Granted, not exactly the light fluffiness pictured on the box, but it turned out to be one third of the fat content, and only two thirds the calories. A little light Cool Whip makes for good icing, too. Apparently one can of diet Coke with a box of chocolate cake mix and Sierra Mist with lemon cake works out well, too. Warning though: only use this trick with cupcakes – not whole pan cakes, which won’t hold together as well.
